It’s the weight of the insulation. Bigger number = more insulation, warmer boot, but heavier as well.

It means each boot has nearly 1 pound of insulation in it.
1 pound = 454 grams.

The 800 grams refers to the amount of insulation in the boot.

Is the thickness of the insulation.
Fabrics are rated by mass per unit of area. In the case of boots it is grams per square meter.
Insulating “fabrics” have varying levels of insulation per thickness (R Value) so a 400 gram boot of X may not be as warm as a 200 gram boot with Y.
800 gram insulation means your boots were designed for coldest winter wear and will be way too hot for summer use.
